Make up instructions Dry Mix 1lb, 1kg Whole bag (12.5kg) (27lb 9oz) Cold water approx 7 fl oz 450ml 5.6 Litres (9 pints 18floz) Scone Yield 12 28 357 357 Doughnut Yield 12 28 357 357 (50g (1.8oz) portions approximately) Scone Method: 1. Place dry mix in a mixing bowl and blend in the required amount of water using a beater on slow speed until a dough is formed. 2. If using fruit or cheese add at this stage, then mix for a further 30 seconds or until fruit/cheese is incorporated. 3. Knead the dough and then roll out onto a floured surface to 13mm thickness. Using a scone cutter, cut out scones and place on a greased baking tray allowing space between each scone (egg wash can be applied at this stage). 3. Bake for 12-15 minutes at 220ºC / 425ºF / Gas Mark 6 as necessary. Doughnut Method: 1. Place dry mix in a mixing bowl and blend in the required amount of water using a beater on slow speed until a dough is formed. 2. Knead the dough gently then roll out onto a floured surface to 6mm thickness. 3. Using a doughnut ring cutter cut out rings, allow to rest for 15 minutes on a floured tray. 4. Deep fry on 180oC/190oC for approximately 1 minute each side until golden brown, turning once. Cooking times may vary. 5. Drain and coat in sugar/icing eat the same day. This is a raw product and must be cooked throughout toa minimum temperature of 75oC for 30 seconds or equivalent (or apply relevant national requirements.
