METHOD

  1. Combine the cream with sugar and the raspberries
  2. Make a small hole in the Éclairs and pipe in the cream
  3. Melt the chocolate callets with the oil to form a glossy chocolate glaze.
  4. Dip the top of each Éclair into the chocolate glaze. For added luxury, top with fresh raspberries
