Champagne
Champagne is a sparkling wine originated and produced in the Champagne wine region of France under the rules of the appellation that demand specific vineyard practices, sourcing of grapes exclusively from designated places within it, specific grape-pressing methods and secondary fermentation of the wine in the bottle to cause carbonation.
The grapes Pinot noir, Pinot meunier, and Chardonnay are used to produce almost all Champagne.
Fizz
Unlike Champagne, Prosecco is usually produced using the alternative Charmat–Martinotti method, in which the secondary fermentation takes place in large stainless steel tanks rather than in each individual bottle, making the wine less expensive to produce, and the minimum production time is 30 days. Higher quality Prosecco using this method will ferment the wine over a longer period, up to around 9 months.
Outside of Italy we generally drink Prosecco as an aperitif and it should be served chilled, as should any fizzy wine.
These wines can be used to create various cocktails, Aperol Spritz, Mimosas and Bellini's or simply enjoyed on its own.

With Prosecco sales continuing to boom, up 55% in value and 39% in volume in 2018, three clever wine enthusiasts sought to reclaim some of that territory with something similar but home-grown. And so, in 2016, Fitz was born.
Fitz is a sparkling wine from England, but not as you know it. Unlike the usual (Champagne style) English sparkling, this light bodied fun, fruity fizz is Prosecco-like. It's light bodied, crisp and fruity with flavours of peach and apple.
Champagne makes a great premium option for your menu. It comes from the Champagne region of France and is made to strict rules, so it sits at a higher price point and works well for celebrations or higher spend customers.
