Hackney Gelato Sea Salted Caramel
Notes of caramel and burnt toffee in this smooth gelato are enhanced by a sprinkle of sea salt. It's a complex but rewarding recipe. Like eating a cryptic crossword. Sort of.

Fresh MILK, sugar, fresh double cream (MILK), caramel paste 8% (glucose syrup, burnt sugar, sugar, flavours), maltodextrin, skimmed MILK powder, coconut oil (coconut oil, glucose syrup, MILK protein), glucose, stabilisers (locust bean gum, guar gum, carrageenan), emulsifier (mono and diglycerides of fatty acids), sea salt flakes.
