Make up instructions 3.5kg White Bread Mix 2.L Warm Water (warm if cold environment) Total 5.5kg 1kg White Bread Mix 580mL Warm Water (warm if cold environment) Total 1.58kg Full bag yield: 11 x 500g loaves, 110 x 50g rolls. Using a spiral mixer - Mix for 2 minutes on slow speed, then 6 minutes on fast speed. In a conventional mixer – Using a dough hook mix for 2 minutes on slow speed and then 6-8 minutes on medium speed. Scale and mould as required. Then rest for 5 minutes covered with cling film or a palstic bag for 5 minutes. Using a Prover – Prove for 50 – 60 minutes at 38c / 80%. If not using a prover cover the dough with oiled cling film and leave to double in size before baking. Bake at 200C fan or 230C conventional deck oven for 25 minutes with steam for large loaves and 12 minutes without steam for rolls.
