Artichokes Jerusalem
This root vegetable is a member of the sunflower family and it can be eaten raw or cooked . The artichokes can be boiled, baked or roasted similar to a potato. When cooked it has a creamy texture and nutty flavour that comes out particularly when roasted. Ideal for making purees, soups, adding to a salad or simply turning into lovely crunchy crisps.
