Parsnips-1200x300

Seasonal parsnips for your culinary creations

Now is the perfect time to celebrate the unsung hero of root vegetables – the parsnip. Part of the Apiaceae family, alongside carrots and parsley, parsnips bring a unique blend of sweetness and versatility to the table. Let’s explore the delightful journey of these underground treasures!

The sweet transformation

Parsnips, classified under the Apiaceae family, earn their place as a root crop that undergoes a sweet transformation during winter frosts. As these humble vegetables hibernate beneath the frost-kissed soil, their flavour intensifies, revealing a natural sweetness that adds a distinct touch to seasonal dishes.

A historical culinary gem

Dating back to Roman times, parsnips have been cultivated for their unique flavour and culinary versatility. Long before the era of sugar beet, these root vegetables served as a natural sweetener, contributing to a range of dishes. Interestingly, parsnips were even fed to pigs, imparting their delicious essence to the renowned Parma ham.

Versatility in the kitchen

One of the most enticing aspects of parsnips is their adaptability in the kitchen. From roasted parsnip fries to creamy parsnip soup, these root vegetables can be used in a multitude of ways to enhance both sweetness and texture in a dish. Piccolo Parsnips add a heightened level of sweetness due to their early harvesting – and can be also cooked whole without the need to peel or prepare. Here our chef has paired them with Kentish apples to create a fresh and appetising salad.

Nutritional goodness

Beyond their delightful flavour, parsnips pack a nutritional punch. Loaded with essential vitamins, minerals and antioxidants, they contribute to a well-rounded and healthy diet. Parsnips are particularly high in vitamin C, vitamin K, folate and potassium, making them a nutritious choice for those looking to embrace seasonal eating.

Our year-round parsnips are supplied by Nottinghamshire-based Hammond Produce. They have been farming in the UK since 1900 and produce over 50,000 tonnes of fresh vegetables each year.
