Ingredients
- A 106161 Lees Broken Meringues (30g)
- A 1721 Matthew Walker Classic Christmas Pudding Loaf (80g)
- F 591132 Andros Morello Cherry High Fruit Compote (40g)
- F 103712 Jude’s Brandy Butter Ice Cream (60ml)
- C 70215 Wholesome Farms Fresh British Double Cream (30ml)
- A 106066 Tate & Lyle Fairtrade Icing Sugar (5g)
- C 450121 Small Oranges (2g)
- A 5027082 Sysco Classic Mallow Piping Bags
Recipe
Preparation:
- Defrost mallow and cherry compote
- Break Christmas pudding into rough/ gnarled pieces
- Whip the cream, with the icing sugar and orange zest
Method:
- Pipe the mallow onto your plate and toast with a blow torch
- Warm the pudding in the microwave- and place between the mallow
- Place pieces of the broken meringue between and over the pudding pieces
- Place cherries and sauce from the compote over everything
- Finish with a rocher of orange chantilly and a scoop of brandy butter ice cream
