Beetroot & Goat’s Cheese Tortelloni, Tarragon & Lemon Butter

Ingredients
- F 136090 La Tua Pasta Tortelloni Beetroot and Goats Cheese (200g)
- F 127209 Lemon & Tarragon Butter Portions (x1)
- C 113878 Herb Bunched Tarragon (3g)
- C 23198 Cricket St Thomas Capricorn Goats Cheese from Somerset (40g)
- C 123502 Lemons (2g)
- A 5002323 Sysco Classic Extra Virgin Olive Oil (2g)
Recipe
Preparation:
- Defrost butter
- Tear goats’ cheese into into small pieces
- Pick tarragon leaves
Method:
- Cook the pasta from frozen in a large pot of well seasoned water at a rolling boil
- Scoop the pasta from the pan, into a sauce pan, and add the butter portion
- Once the sauce has coated the pasta, add the tarragon and grate a zest of lemon into the pan
- Arrange the pasta into a bowl, and evenly distribute the torn goats’ cheese
- Finish with a drizzle of the olive oil
