Beetroot & Goat’s Cheese Tortelloni, Tarragon & Lemon Butter

Serves 1

  • F 136090 La Tua Pasta Tortelloni Beetroot and Goats Cheese (200g)
  • F 127209 Lemon & Tarragon Butter Portions (x1)
  • C 113878 Herb Bunched Tarragon (3g)
  • C 23198 Cricket St Thomas Capricorn Goats Cheese from Somerset (40g)
  • C 123502 Lemons (2g)
  • A 5002323 Sysco Classic Extra Virgin Olive Oil (2g)

Preparation:

  • Defrost butter
  • Tear goats’ cheese into into small pieces
  • Pick tarragon leaves

Method:

  • Cook the pasta from frozen in a large pot of well seasoned water at a rolling boil
  • Scoop the pasta from the pan, into a sauce pan, and add the butter portion
  • Once the sauce has coated the pasta, add the tarragon and grate a zest of lemon into the pan
  • Arrange the pasta into a bowl, and evenly distribute the torn goats’ cheese
  • Finish with a drizzle of the olive oil
