The rump heart is a soft piece of meat from the rump of the animal. This cut consists of the wonderfully tender rump primal. Steaks can be cut from this. The firmer part of the rump heart is suitable for roast beef, rump steak and carpaccio. Matured for 28 days for flavour and tenderness.
