Food Safety TipsCompletely remove the meat from the vacuum pack 1 hour before cooking. Cook throughout to a minimum temperature of 75°C for 30 seconds or equivalent (or apply relevant national requirement). If cooking rare Food Standards Agency advice is to ensure the meat is properly sealed.
