These joints are supplied in individual roasting bags to shorten cooking time and help retain moisture and flavour. 85% meat content. Boneless for easy carving and minimised waste, and suitable for cooking from frozen. Unlike beef which differs with cut and personal preference, it's best to always cook lamb medium unless you're slow cooking. This means it will be tender and juicy and have a lovely pink blush to the flesh.

Handling instructions
Allow to thaw in a refrigerator for approximately 24 hours. Once defrosted keep refrigerated and consume within 48 hours.

Cooking times may vary. This is a raw product and must be cooked throughout to a minimum temperature of 75°C for 30 seconds or equivalent (or apply relevant national requirement).

Oven Cooking Instructions
As for frozen but reduce the cooking time by approximately 1hr 45 mins. Remove from the roasting bag and discard the metal clip before carving. Remove from case, but leave in roasting bag. Place in a roasting tray in the middle of a preheated oven at 190°C / Gas Mark 5 for approximately 2hrs 45mins.
