You will need:175g butter900ml cold milkSpring sided, loose based, cake tin(s)Makes1 x 26cm (10”) deep filled cheesecakes (24 portions)2 x 18 cm (7”) deep filled cheesecakes (12 portions)3 x 20cm (8”) shallow filled cheesecakes (8 portions)Biscuit Crumb Base Directions1. Melt 175g butter in a saucepan & stir thoroughly into the biscuit crumb2. Divide the mixture between the tins to be used and smooth down3. Chill for 10 minutesCheesecake Topping Directions1. Measure 900ml cold milk into a mixing bowl of at least 5 litres capacity2. Add the topping mix and whisk at low speed for about 30 seconds until blended3. Whisk at high speed for 1 minute4. Spread the topping over the crumb base and chill for an hour before serving565g Makes 24 Portions
