We have a highly skilled, dedicated and knowledgeable team of regionally based meat specialists who will provide expert guidance and bespoke solutions for your business.

Dry aging is an artisan craft dating back thousands of years, in which the meat hangs in a controlled open-air environment. This draws moisture out slowly and gently, allowing naturally-occurring enzymes to make the meat tender; the process also makes the flavour deeper and more complex.

Wet aging is beef packed, sealed and refrigerated immediately after slaughter. The higher moisture content gives the meat a very tender texture and a more pronounced “fresh beef” flavour when compared to the drier and more intense, earthy flavour produced by dry aging.​
