Our bases are 100% Sourdough or "lievito madre” from Italy, which is over 120 years old!
Scrocchiarella is made with Olio Coppini, the highest quality Italian Extra virgin olive oil.
There is 80% water in the dough, whereas traditional pizza dough is around 55-60%...
