Chef Oli brings the taste of the Middle East to summer dining with this crisp and colourful Open Fattoush Salad.
Refreshing and vibrant, this versatile Lebanese dish uses a celebration of fresh, seasonal ingredients, making it a popular choice during the warmer summer months.

The salad combines a bright selection of seasonal fresh produce, including a mix of red and yellow cherry tomatoes, cucumber, little gem lettuce, onion pickles, and pomegranate seeds. Generous amounts of fresh herbs are also added, including mint and parsley, to infuse the dish with a fragrant burst. Dressed using a simple but tangy vinaigrette made from sumac, olive oil, sherry vinegar, and lemon juice.

The sourdough pitta bread is grilled on a BBQ to increase flavours and create a delightful crunch, adding extra texture to the salad, then topped with creamy smoked houmous with harissa to add a fiery and flavourful punch before adding the salad.

To finish off the dish, dust a sprinkle of sumac on top along with pomegranate seeds for further flavour and presentation.

This versatile dish can be enjoyed alongside grilled meats, as a starter, or as a light main course on its own—no matter what course, it will be sure to entice the tastebuds this summer!
