Chateaubriand makes a wonderful, luxurious mini roast with all the tenderness of beef fillet. Originally a recipe created for Francois Vicomte de Chateaubriand (1768-1848), the French author and statesman who served Napoleon as ambassador to Britain. It is now normally used to describe a cut from the larger end of the tenderloin which is traditionally served as a sharing joint for two. Our Scotch beef is predominantly grass-fed, naturally raised on farms recognised for high standards of animal welfare by Quality Meat Scotland.
